- Take country chicken and clean it with lemon juice and turmeric powder. Put them in a pressure cooker and add 6 cups water,1/2 spoon jeera, 2 crushed shallots, 1 spoon ginger garlic paste, 1/2 spoon rock salt, 1 pinch turmeric powder and pressure cook for 7 to 9 whistles..
- Take a kadaai/pan and add sesame oil and when hot add chopped shallots and curry leaves..
- When onions turn golden brown in colour add ginger garlic paste and saute till raw smell goes off.
- Then add the paste made under ingredients for grinding and saute till oil oozes out.
- Then add tomatoes and 1 1/2 spoon rock salt and cook till tomato gets mushy.
- Now add 4 spoons kulambu milagai podi/homemade curry chilli powder and cook till raw smell goes off in low flame. Add left over water by cleaning mixie while grinding ginger garlic paste and curry paste and cook till oil oozes out..
- Now add the pressure cooked country chicken along with stock and mix with the masala. Add water if needed. Boil the curry for another 15 minutes and switch off flame. Check for salt and spice levels. Add pepper and coriander leaves if needed..
- Serve hot with rice, chapati, roti, paratha, idiyappam, idli and dosa..
